Nicaragua possesses numerous high-quality cacao varieties, but it wasn't until the end of 2015 that the International Cocoa Organization (ICCO) recognized the country as a fine cacao origin (one of only nine countries to earn this designation). Nicaragua's Nicalizo cacao became the first to be designated as Heirloom Cacao by the Heirloom Cacao Preservation Initiative (HCP) at the end of 2015. The term "heirloom cocoa" can have multiple meanings, but in the case of HCP, it signifies that the cacao beans have exceptional or unique flavours due to a combination of genetics, soil, and post-harvest processing (fermentation and drying).Nicaragua Nicalizo 70% Dark Chocolate offers a complex flavour profile, with low acidity and intense cacao flavour. It carries notes of dried fruits, raisins, and a woody texture and taste.
