O'PAYO™ organic cacao beans are sourced from the northern city of Waslala in Nicaragua. Renowned exporters oversee the collection of cocoa beans from producer farms, transporting them between different farms to reduce farmers' costs. This process also involves controlling the fermentation at its earliest stages, ensuring the high quality of the cacao beans.O'PAYO™ originates from the mountainous region of Waslala in northern Nicaragua, which is also home to the Bosawas Natural Reserve. This reserve is the largest protected area in Central America and has been designated a UNESCO Biosphere Reserve since 1997.This chocolate boasts a rich creamy texture and natural sweetness, featuring delightful notes of candied citrus and coconut, along with a lingering finish of firm tannins.
