可可豆/ Cacao Used:委內瑞拉Chuao/ Venezuela Chuao

 

風味/ Flavour:Chuao可可生長在一個成立於1660年,名為Chuao的小村莊,此村莊位於委內瑞拉北部沿海山脈,被茂密的雨林所環繞,獨特的可可豆在村莊教堂“Plaza de Secado”前的陽光下風乾。Chuao可可豆由25種Criollo以及Trinitario品種混合而成,每年約有兩次收成,每次收成後均會再木箱中進行6至7天的發酵,營造黃色水果以及葡萄乾味道。/Chuao cacao is cultivated in a small village named Chuao, established in 1660, situated in the northern coastal mountain range of Venezuela, surrounded by dense rainforests. The distinctive cacao beans are sun-dried in front of the village church's "Plaza de Secado." Chuao cacao is a blend of 25 Criollo and Trinitario varieties, harvested approximately twice a year. After each harvest, the beans undergo a fermentation process in wooden boxes for 6 to 7 days, imparting a flavour profile characterised by yellow fruits and raisin notes.
